Once the can is opened, the inside of the can comes into contact with oxygen and the tin begins to dissolve from the can into the food inside it. This is why if the entire can of food is not used at once, the remaining food should be transferred to another container for storage. Even if the can is coated with a separate layer of varnish, it will usually break when the can is opened. In this case, tin migrates to the food from the tin plate under the coating. The inner coating may also break if the can becomes dented during storage. It is never advisable to buy dented cans at the store.
