The Food Act lays down the general requirements for food establishments. Further provisions on the structural and operational requirements of food establishments are laid down in Regulation (EC) No 852/2004 of the European Parliament and of the Council on the hygiene of foodstuffs. Requirements for food premises handling food of animal origin before retail, so called approved establishments, are laid down in Regulation (EC) No 853/2004 of the European Parliament and of the Council laying down specific hygiene rules for food of animal origin and in Decree of Ministry of Agriculture and Forestry on food hygiene (318/2021). The approval of food premises is subject to the precondition that the food premises comply with the requirements laid down in food regulations.
